
I cooked today!
Every few weeks, I take a weekend and go completely insane and cook for the next several days. That way, I get to eat good, healthy food, but still give me time to do my own thing after work. My schedule this time was knocked back a bit as my father gave me several meals for Xmas, which I just finished on Thursday night. Yesterday I shopped for food, and today I started the cooking. If I'm lucky, I'll be able to finish up tomorrow.
Today was Singapore day, as I'm learning that style this week:
* Mixed Vegetable Soup
* Chicken Dumpling Soup (I cheated on the dumplings a bit, they're less pretty and more square. I had to do that as I ran out of egg white to seal the edges.)
* Mild Fish Curry (I cheated here a bit too, by not grinding the spices to a paste -- I kinda like texture anyway)
* Fish with Ginger
* Chicken and Basil Stir Fry
* Chicken with Galangal
* Ginger and Soy Roast Chicken (I cheated again here, by using chicken breasts instead of a roaster, I think that the flavoring is more likely to penetrate it this way.)
That gives me 14 frozen meals right now and 9 recipes to cook tomorrow. Should be fun.
