Cheetahs need exercise, so zoos have started doing “cheetah runs”, where the cheetah chases a toy around a track. To get a good shot, you have to set up about half an hour in advance for maybe thirty seconds of a run. Still, I think you can get good shots if you’re lucky.

Do they really just run for 30 seconds and then stop and they're done for the day? Or will they rest and then run again?

Yes. Actually, if they run too long (and "too long" is pretty much defined as 45-60 seconds), they can overheat and die.

They're done for the day because they're biologically done for 24 to 48 hours.
